  • 2 cups water, divided 1 cup cold water for blooming and 1 cup hot water
  • 2 tablespoons unflavored powdered gelatin
  • 2 to 3 tablespoons fresh lemon or lime juice, optional Adds brightness

  • to taste sweetener, optional Honey or stevia recommended

Instructions
 

Preparation

  • Bloom the gelatin by pouring 1 cup cold water into a mixing bowl and sprinkling gelatin on top. Let it sit for 5 minutes.
  • Heat the other cup of water until very hot but not boiling. Pour it over the bloomed gelatin and whisk until completely dissolved.
  • Add lemon or lime juice, a tiny pinch of salt, and your preferred sweetener to the mixture and stir well.
  • Pour into a glass dish or jars and chill for at least 3 hours.
  • Cut into squares or scoop with a spoon and store in the refrigerator.

Notes

This gelatin recipe can be flavored in various ways. Store in a sealed container in the fridge for up to 5 days. For a quick snack, pour into small jars or silicone molds.
