  • 1 tablespoon unflavored gelatin powder approximately 9 to 10 grams
  • 1 cup cold water for blooming
  • 1 cup hot water just off a boil for dissolving
  • 2 tablespoons fresh lemon juice for brightness
  • 1 to 2 teaspoons honey or liquid stevia optional sweetener
  • 1 pinch sea salt to round out the flavor

Preparation

  • Pour the cold water into a heat-safe bowl. Sprinkle the gelatin across the surface and let it sit for 5 minutes.
  • Heat the second cup of water until hot but not boiling. Pour it over the bloomed gelatin and whisk until completely dissolved.
  • Stir in the lemon juice, a pinch of salt, and the sweetener if using. Taste and adjust.
  • For a classic jello cup, pour the mixture into a glass container or small jars and refrigerate for at least 2 hours.
  • Alternatively, sip it warm for a calming drink.

Notes

For a softer set, use 2 teaspoons of gelatin. Flavor swaps include adding frozen berries or fresh ginger.
