  • 2 lbs ground chicken
  • 1 cup panko bread crumbs
  • ½ cup grated Parmesan cheese (plus more for topping)
  • ¼ cup milk
  • 2 large eggs, lightly beaten
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup chopped fresh parsley
  • ¼ cup chicken broth
  • 2 tablespoons butter, melted
  • 1 tablespoon garlic powder

Preparation

  • Grab a large mixing bowl and whisk together the milk and lightly beaten eggs.
  • Add panko bread crumbs, ½ cup Parmesan cheese, Italian seasoning, salt, and pepper to the bowl. Mix until just combined.
  • Heat olive oil in a skillet over medium heat, add minced garlic, and sauté for 1-2 minutes until fragrant.
  • Pour sautéed garlic and oil mixture into the bowl, adding chopped parsley.
  • Gently mix in the ground chicken until combined without overmixing.
  • Preheat oven to 350°F (175°C).
  • Grease a 9x5 inch loaf pan with cooking spray or olive oil.

Baking

  • Transfer the meatloaf mixture to the loaf pan and shape it into an even loaf.
  • In a small bowl, combine melted butter and garlic powder to create a topping.
  • Brush the garlic butter mixture over the top of the meatloaf.
  • Sprinkle additional grated Parmesan cheese on top.
  • Pour chicken broth into the bottom of the loaf pan.
  • Bake in the preheated oven for 60-70 minutes, until the internal temperature reaches 165°F (74°C).
  • Remove from oven and let rest for 10-15 minutes before slicing.
  • Carefully slice the meatloaf and serve immediately.

Notes

Serve with sides like mashed potatoes, green beans, or salad. Store leftovers in an airtight container in the fridge for up to four days.
