  • 1.5 lbs beef stew meat, cut into bite-sized pieces Chuck roast can also be used.
  • 2 cups baby potatoes, halved Other potatoes like red or Yukon gold can be substituted.
  • 1/2 cup unsalted butter Using fresh butter enhances flavor.
  • 4 cloves garlic, minced Adjust according to taste.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika Add more for heat.
  • 1 teaspoon dried thyme Fresh herbs can be used as well.
  • 1 cup beef broth Vegetable or chicken broth can be substituted.
  • Fresh parsley for garnish

Preparation

  • In a slow cooker, add the beef stew meat and baby potatoes, letting them nestle together.
  • In a saucepan over medium heat, melt the butter. Add in the minced garlic, salt, pepper, paprika, and thyme. Stir for about 1-2 minutes until fragrant.
  • Pour the garlic butter mixture over the beef and potatoes. Add the beef broth.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is tender.
  • Garnish with fresh parsley before serving.

Notes

If you have leftovers, they can be stored in airtight containers in the fridge for up to three days. When reheating, add a splash of beef broth if it looks thick.
