  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.5 cups unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 1 cup fresh strawberries, sliced
  • 1 cup whipped cream

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, beat together the softened butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition, and then stir in the vanilla extract.
  • In another bowl, sift together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
  • Gently fold in the sliced strawberries into the batter.
  • Divide the batter evenly between the two prepared cake pans and smooth the tops.

Baking

  • Bake in your preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.

Assembly

  • Once the cakes are completely cool, layer them on a serving plate. Spread a generous amount of whipped cream on top of the first layer, add more sliced strawberries, and repeat with the second layer.
  • Finish with whipped cream and strawberries on top.

Notes

For added flavor, consider pairing the cake with vanilla ice cream or a drizzle of chocolate sauce. Store leftovers in an airtight container in the fridge for up to 3 days.
