Freakin' Fantastic Fried Rice

Ingredients
  

Main Ingredients

  • 4 cups cold, cooked rice
  • 3 tablespoons butter
  • 1 each onion, diced
  • 12 oz frozen peas and carrots
  • 1/2 cup soy sauce
  • 3 each eggs, beaten

Instructions
 

Preparation

  • Heat 3 tablespoons of butter in a skillet over medium heat.
  • Add one diced onion and cook until it turns translucent, about 3 minutes.
  • Toss in 12 oz of frozen peas and carrots and cook for another 2-3 minutes until heated through.

Cooking

  • Stir in 4 cups of cold, cooked rice and 1/2 cup of soy sauce.
  • Mix everything well and cook for 3-4 minutes to warm up the rice and absorb flavors.
  • Push the rice to one side of the skillet and pour in 3 beaten eggs on the empty side.
  • Scramble the eggs for about 2 minutes and then mix them into the rice.
  • Serve hot and garnish with green onions or sesame seeds if desired.

Notes

Store in an airtight container in the fridge for up to 4 days. Freeze in a freezer-safe bag for up to a month. Reheat in an air fryer or oven to maintain crispiness.
