  • 1/2 cup chocolate chips Semi-sweet or dark chocolate chips can be used.
  • 1 egg Can use flaxseed meal or applesauce for a vegan version.
  • 1 teaspoon vanilla extract For added flavor.
  • 1/2 teaspoon baking soda Helps cookies rise.
  • 1 pinch salt Enhances overall flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the peanut butter, brown sugar, egg, vanilla extract, baking soda, and salt. Mix well until smooth and creamy.
  • Stir in the rolled oats and chocolate chips until everything is nicely combined.
  • Line your baking sheet with parchment paper.
  • Drop spoonfuls of the dough onto the prepared baking sheet, leaving space between each cookie.

Baking

  • Bake in the preheated oven for about 10-12 minutes until the edges turn lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes. Then transfer them to a wire rack to cool completely.

Notes

To keep cookies fresh, store them in an airtight container for up to a week in the fridge or three months in the freezer. To revive chewiness, reheat them in the oven or an air fryer at 350°F for 2-3 minutes.
