Ingredients
  

For the Cake

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

For the Frosting

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 1/4 cup milk (for frosting)
  • 1/2 cup chocolate glaze (optional) This is optional for drizzling over the cake.

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  • In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix until well blended.
  • Add the eggs, whole milk, vegetable oil, and vanilla extract. Mix until everything is combined.
  • Slowly stir in the boiling water to create a smoother batter.
  • Divide the batter evenly among the three prepared pans.
  • Bake in the preheated oven for 30-35 minutes until a toothpick comes out clean.
  • Allow cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Frosting

  • In another bowl, beat together the creamy peanut butter and softened butter until fluffy.
  • Gradually add the powdered sugar and milk to the peanut butter mixture, mixing until smooth.
  • Once the cakes are completely cool, spread the peanut butter frosting between the layers and on top of the cake.
  • Drizzle some chocolate glaze over the top if desired.

Notes

Wrap any leftover cake tightly in plastic wrap or an airtight container to keep it fresh for 3-5 days in the fridge. Consider adding chocolate chips or different nut butters for creative twists!
