Ingredients
  

For the Dressing

  • 1 cup full-fat Mayonnaise
  • cup freshly grated Parmesan cheese
  • 2 fillets Anchovy Fillets minced into a paste
  • 2 tablespoons Milk (preferably whole milk)
  • 1 each Lemon juice only (about 2 tablespoons)
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon Worcestershire Sauce
  • 1 small clove Garlic minced
  • ¼ teaspoon Salt
  • ¼ teaspoon Black Pepper

For the Chicken

  • 2 boneless, skinless Chicken Breasts (7-9oz/200-250g each)
  • 1 cup Panko Breadcrumbs
  • ¼ cup All-purpose Flour
  • 2 large Eggs beaten
  • 1 teaspoon Salt (for chicken coating)

For the Salad

  • Romaine Lettuce enough for 2 servings washed and chopped
  • Croutons for serving optional

Preparation

  • Prepare the chicken breasts by pounding them to a uniform thickness of about ½ inch. Pat them completely dry with paper towels.
  • Set up a breading station with three shallow dishes: one with all-purpose flour, one with beaten eggs, and one with Panko breadcrumbs mixed with 1 teaspoon of salt.

Breading and Cooking Chicken

  • Dredge each chicken breast in flour, then dip in beaten eggs, and finally coat thoroughly with the Panko breadcrumb mixture. Press gently to adhere.
  • Heat ½ inch of neutral oil in a skillet over medium-high heat. Carefully fry the breaded chicken for 4-6 minutes per side, until golden brown and cooked through (internal temperature 165°F/74°C). Drain on a wire rack.

Making the Dressing

  • In a medium bowl, whisk together mayonnaise, Parmesan cheese, minced garlic, anchovy paste, Dijon mustard, Worcestershire sauce, and lemon juice. Gradually whisk in milk until desired consistency is reached. Season with salt and pepper.

Assembling the Salad

  • Combine chopped romaine lettuce with Caesar dressing and toss to coat. Slice the cooked chicken and arrange over the salad. Garnish with extra Parmesan cheese if desired.

Notes

For a bit of spice, add a dash of chili powder to the breadcrumbs or sprinkle fresh herbs for added flavor. Store components separately to maintain the chicken's crispy texture.
