  • 6 large large eggs
  • 1 cup fresh spinach, chopped Use crisp, fresh spinach for best flavor.
  • 1/2 cup feta cheese, crumbled Creamy feta adds a pleasant tang.
  • 1/2 cup bell peppers, diced (optional) Feel free to skip or substitute with other vegetables.
  • 1/4 cup milk
  • to taste Salt and pepper
  • as needed Olive oil or cooking spray For greasing the muffin tin

Preparation

  • Preheat your oven to 350°F (175°C) and grease a muffin tin with olive oil or cooking spray.
  • In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  • Stir in the chopped spinach, feta cheese, and any optional ingredients until everything is well mixed.
  • Pour the egg mixture evenly into the muffin cups, filling each about 3/4 full.

Baking

  • Bake for 18-20 minutes, or until the muffins are set and lightly golden on top.
  • Allow to cool slightly before removing from the tin.

Serving

  • Serve warm or store for meal prep later in the week.

Notes

These muffins can be made ahead of time. They can be stored in the refrigerator for up to five days or frozen for longer storage. Reheat in the microwave or oven for a quick meal.
