Ingredients

  • 1 cup almond flour
  • 1/2 cup rolled oats
  • 1/4 cup coconut sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract

Chocolate Chips

  • 1/2 cup vegan chocolate chips

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix the almond flour, rolled oats, coconut sugar, baking soda, and salt together.
  • Add the melted coconut oil, maple syrup, and vanilla extract to the bowl. Stir until everything is well mixed and forms a thick dough.
  • Gently fold in the vegan chocolate chips.
  • Scoop tablespoon-sized portions of the dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  • Bake for 10-12 minutes until the edges are golden brown but the centers remain soft.
  • Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Notes

For optimal freshness, store cookies in an airtight container at room temperature. These cookies can also be served with vanilla vegan ice cream or paired with fresh berries.
