Wet Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

  • 1 cup chocolate chips

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the pumpkin puree, sugar, brown sugar, and softened butter until smooth.
  • Beat in the egg and vanilla extract until well combined.
  • In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • Gradually add the dry ingredients to the wet ingredients until just combined.
  • Fold in the chocolate chips.

Baking

  • Drop spoonfuls of dough onto a baking sheet lined with parchment paper, spaced about two inches apart.
  • Bake for 10-12 minutes until edges are set and the center is soft.

Cooling

  • Let cool for a few minutes before transferring to wire racks.

Notes

For extra delight, pair with vanilla ice cream or drizzled caramel. Store in an airtight container for up to a week, or freeze for three months.
