Main Ingredients

  • 4 to 5 lb pork shoulder Choose a well-marbled cut for best flavor.
  • 1 cup apple juice Helps to keep the pork moist.
  • 1/2 cup barbecue sauce Use your favorite type.
  • 1 tsp liquid smoke Optional but adds smoky flavor.

Spice Rub

  • 2 tbsp brown sugar Brown sugar adds sweetness.
  • 1 tbsp paprika Regular or smoked paprika can be used.
  • 1 tsp garlic powder Adds depth of flavor.
  • 1 tsp onion powder Using onion powder enhances flavor.
  • 1 tsp salt Adjust according to taste.
  • 1/2 tsp black pepper Freshly ground is preferred.
  • 1/2 tsp chili powder Add more for extra heat.

Instructions
 

Preparation

  • In a bowl, combine brown sugar, paprika, garlic powder, onion powder, salt, black pepper, and chili powder. Stir until well mixed.
  • Rub the spice mix all over the pork shoulder, covering it evenly.

Cooking

  • Place the seasoned pork in the slow cooker. Pour apple juice and liquid smoke over the top.
  • Cover the slow cooker and cook on low for 8 to 10 hours, until the meat shreds easily with a fork.
  • Remove the pork from the slow cooker and shred it using two forks.
  • Stir in barbecue sauce until well coated.
  • Return the shredded pork to the slow cooker with the cooking juices and let it sit for 15 minutes before serving.

Notes

For best flavor, consider mixing spices a day in advance. The pork can be served on bulk sandwich rolls or with sides like baked beans and coleslaw.
