  • 4 pieces boneless pork chops Pat dry for better searing.
  • 1 tbsp olive oil For searing.
  • 1 tbsp butter Adds flavor.
  • 1/2 tsp salt To taste.
  • 1/4 tsp black pepper To taste.
  • 1 tsp paprika Adds depth of flavor.
  • 8 oz mushrooms, sliced Substitute with bell peppers if desired.
  • 1 small onion, sliced For sweetness.
  • 2 cloves garlic, minced For flavor.
  • 1 cup chicken broth For the sauce.
  • 1/2 cup heavy cream For creaminess.
  • 1 tsp Dijon mustard For a tangy flavor.

Preparation

  • Pat the pork chops dry and season both sides with salt, pepper, and paprika.
  • Heat the olive oil and butter in a large skillet over medium-high heat.
  • Sear the pork chops for 3 to 4 minutes on each side until golden brown, then remove to a plate.

Cooking

  • In the same skillet, toss in the sliced mushrooms and onion. Cook until softened, about 4-5 minutes.
  • Stir in the minced garlic and cook for just 30 seconds, being careful not to burn it.
  • Add chicken broth and Dijon mustard, scraping up browned bits from the pan.
  • Pour in the heavy cream and stir until smooth.
  • Return the pork chops to the skillet. Simmer for 5 to 7 minutes until the sauce thickens and pork reaches an internal temperature of 145°F.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven for best results.
