Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream the softened butter, granulated sugar, and powdered sugar together until light and fluffy.
  • Mix in the egg and vanilla extract until fully combined, creating a smooth batter.
  • Gradually add the all-purpose flour, baking powder, and salt, stirring until a soft dough forms.
  • Roll the dough into 1-inch balls and coat each ball with pastel sprinkles.

Baking

  • Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 8 to 10 minutes, or until the edges are lightly golden and the centers remain soft.
  • Let the cookies cool on a wire rack.
