  • 1 cup long-grain white rice Rinse under cold water until clear.
  • 2 cups vegetable broth Can substitute with chicken broth.
  • 1 tablespoon olive oil Can use fresh butter for a different flavor.
  • 1 small onion, diced Sauté until translucent.
  • 1 clove garlic, minced Adds flavor to the dish.
  • 1 teaspoon ground cumin Gives a warm spice flavor.
  • 1 teaspoon chili powder Adjust to taste.
  • 1 cup diced tomatoes Can use canned or fresh.
  • to taste salt and pepper Add to enhance flavors.
  • for garnish Chopped cilantro Optional for presentation.

Preparation

  • Rinse the rice under cold water until the water runs clear.
  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  • Stir in the minced garlic and cook for another 30 seconds.
  • Add the rice to the skillet and toast for 2-3 minutes, stirring frequently.
  • Add the vegetable broth, diced tomatoes, cumin, chili powder, salt, and pepper. Stir until everything is combined.
  • Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes.
  • Fluff the rice with a fork and garnish with chopped cilantro if desired.

Notes

Leftovers can be stored in an airtight container in the fridge and may taste even better the next day. Reheat by adding a splash of water or broth to keep it moist. Variations can include black beans, corn, or fresh veggies.
