Dressing

Preparation

  • Cook the macaroni according to package instructions until just al dente. Drain and let cool completely.
  • In a large mixing bowl, combine the cooled macaroni, diced bell peppers, diced celery, shredded carrots, and cubed cheese.
  • In a separate smaller bowl, mix together the mayonnaise, Dijon mustard, salt, and pepper until smooth and creamy.
  • Pour the dressing over the salad mixture, gently combining until every piece is coated.
  • Chill the salad in the refrigerator for at least 1 hour before serving.

Notes

This salad can be made a day in advance for deeper flavor. Keeps well in the refrigerator for 3 to 5 days.
