  • 1 tbsp olive oil for frying
  • 2 cups cooked rice
  • 2 cups broccoli florets steamed
  • 1 cup shredded carrots

Sauce Ingredients

  • 1/4 cup honey
  • 3 tbsp soy sauce
  • 3 cloves garlic, minced
  • 1 tsp cornstarch
  • 2 tbsp water to mix with cornstarch

Instructions
 

Cooking Chicken

  • Heat the olive oil in a large skillet over medium heat. Add the diced chicken thighs and cook until golden brown and cooked through, about 8-10 minutes.

Making Sauce

  • While the chicken is cooking, whisk together the honey, soy sauce, and minced garlic in a small bowl.

Combining Sauce with Chicken

  • Once the chicken is browned, pour the honey garlic sauce into the skillet, stirring well to coat the chicken.
  • Mix the cornstarch with water until smooth and add to the skillet to thicken the sauce, stirring regularly until glossy.

Steaming Veggies

  • Steam the broccoli until just tender, about 4-5 minutes.

Assembling Bowls

  • In meal prep containers, divide the cooked rice, steamed broccoli, and shredded carrots. Top each with honey garlic chicken.
