Ingredients
  

Dry Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cups sugar
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt

Wet Ingredients

  • 1 cup fresh strawberries, chopped
  • 0.33 cups unsalted butter, melted
  • 1 large egg
  • 0.5 cups milk
  • 1 tsp vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, mix the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk together the wet ingredients: melted butter, egg, milk, and vanilla extract.

Baking

  • Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  • Fold in the chopped strawberries.
  • Fill each muffin cup about 2/3 full with the batter.
  • Bake for 20-25 minutes. Check for doneness with a toothpick.
  • Cool in the pan for a few minutes before transferring to a wire rack.

Notes

These muffins can be served warm, with vanilla ice cream, fresh berries, whipped cream, or drizzled with strawberry sauce. Store in an airtight container in the fridge for up to a week or freeze for up to 3 months.
