Easy Dorito Taco Salad

Ingredients
  

For the beef

  • 1 lb ground beef You can substitute with ground turkey or shredded chicken.
  • 1 tbsp taco seasoning Check for gluten-free options if needed.
  • 1/4 cup water

For the salad

  • 1 head romaine, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar
  • 1 can black beans, drained and rinsed Can substitute with pinto or kidney beans.
  • 1 cup Catalina dressing Consider using a yogurt-based dressing for a lighter option.
  • 2 cups crushed Nacho Cheese Doritos Add just before serving to maintain crunch.

Instructions
 

Cook the Beef

  • In a skillet over medium heat, cook the ground beef until it’s browned. Break it apart with a spatula while it cooks.

Season the Meat

  • Once browned, drain any extra grease. Stir in the taco seasoning and water, letting it simmer for about 2 minutes.

Prep the Veggies

  • While your beef cools slightly, place all your chopped romaine, halved cherry tomatoes, shredded cheddar, and rinsed black beans in a large mixing bowl.

Combine the Beef

  • Add the seasoned beef into the bowl of veggies. Give everything a gentle toss.

Dress It Up

  • Pour the Catalina dressing over your salad mix and toss until everything is well coated.

Fold in the Doritos

  • Right before serving, add the crushed Doritos, folding them in carefully so they don’t turn to mush.

Serve Family-Style

  • Serve immediately, either as a plated dish or an easy-going family-style bowl.

Notes

Store leftovers without the Doritos mixed in. The beef and veggie mix can be refrigerated for 3 days. Reheat before adding fresh Doritos to maintain crunch.
