Ingredients
  

For the Soup Base

  • 1 tablespoon olive oil To sauté the onion
  • 1 medium onion (finely diced) Adds sweetness and depth

  • 2 tablespoons tomato paste Enhances tomato flavor
  • 25 ounces tomato basil pasta sauce Rich base for the soup
  • 28 ounces diced canned tomatoes For texture and freshness
  • 4 cups chicken broth More can be added for a thinner consistency
  • 2 teaspoons kosher salt (divided or more to taste) Essential for seasoning

For the Noodles & Dairy

  • 12 pieces lasagna noodles (uncooked and broken into 2-inch pieces) Main component of the soup
  • ½ cup heavy cream (optional) Adjust for richness
  • 1 cup shredded mozzarella cheese For topping and creaminess
  • ½ cup parmesan cheese (freshly grated) Added for flavor
  • ½ cup ricotta cheese Dolloped on top for creaminess
  • 6 tablespoons fresh basil (finely chopped) For garnish

Instructions
 

Preparation

  • Heat the olive oil in a large pot or Dutch oven over medium heat.
  • Add the diced onion and cook until soft and translucent, about 3-5 minutes.
  • Stir in the ground beef and sauté until browned all over.
  • Add the minced garlic, red pepper flakes, and 1 teaspoon of kosher salt. Stir in the dried oregano and tomato paste, sautéing for another couple of minutes.
  • Pour in the tomato sauce, diced tomatoes, and chicken broth. Bring to a gentle boil.
  • Add the broken lasagna noodles and sprinkle the remaining 1 teaspoon of kosher salt.
  • Reduce heat and simmer for about 15 minutes, stirring occasionally, until noodles are tender.

Finishing Touches

  • Stir in the heavy cream and add mozzarella or parmesan cheese to the pot if desired.
  • Serve in bowls topped with a dollop of ricotta cheese, a sprinkle of mozzarella and parmesan, and fresh basil.

Notes

For a vegetarian version, substitute ground beef with lentils or mushrooms. This soup stores well and can be frozen for up to three months. Reheat on the stove and add a splash of chicken broth if it thickened too much.
