Dressing

  • 1/2 cup mayonnaise Hellmann's makes it creamier.
  • 1 tsp mustard
  • 1.5 tbsp sugar Adjust to taste.
  • 1.5 tsp apple cider vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp celery seeds Essential for authentic taste.
  • 1/4 tsp paprika For garnish.

Preparation

  • Begin by boiling the potatoes in a large pot of salted water until fork-tender, about 15-20 minutes.
  • Drain the potatoes and allow them to cool slightly.
  • In a large mixing bowl, combine the diced hard-boiled egg, celery, and red onions.
  • In a separate bowl, whisk together the mayonnaise, mustard, sugar, apple cider vinegar, salt, black pepper, celery seeds, and paprika.
  • Once the potatoes are cool, gently add them to the vegetable mixture.
  • Pour the dressing over the potatoes and mix everything together until well coated.
  • Cover the bowl with plastic wrap and refrigerate for at least an hour before serving.

Serving

  • Sprinkle some paprika on top for added color and serve with garnishes like parsley or sliced green onions.
  • Pairs well with grilled burgers, corn on the cob, or roast chicken.

Notes

The potato salad gets better with time; store leftovers in an airtight container for up to three days. For a lighter version, substitute Greek yogurt for half of the mayonnaise.
