  • 4 cups Mixed greens Use your favorite variety.
  • 1 cup Cherry tomatoes Halved.
  • 1 medium Cucumber Chopped.
  • 6 small Radishes Sliced.
  • 4 large Hard-boiled eggs Sliced.
  • 8 oz Deli meat (e.g., turkey or ham) Sliced.
  • 4 oz Cheese (e.g., cheddar or Swiss) Sliced.
  • 1 cup Thousand Island dressing For drizzling on top.

Preparation

  • Wash and chop all the vegetables into bite-sized pieces.
  • Slice the hard-boiled eggs, deli meat, and cheese into even slices.
  • In meal prep containers, layer the mixed greens first.
  • Then add the chopped veggies, sliced eggs, deli meat, and cheese.
  • Drizzle your homemade Thousand Island dressing on top or keep it separate in a small container.
  • Seal the containers and refrigerate until it’s time to eat.

Notes

Store in the fridge for up to three days. To reheat leftovers, bake at 350°F for about 5 minutes for optimal crispness. Use pre-chopped vegetables, rotisserie chicken, and bagged salad mixes for convenience.
