Easy Cheesy Chicken Quesadillas

Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound chicken breasts boneless, skinless, cut into ½-inch cubes
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • salt and pepper to taste
  • 8 flour tortillas 6-inch size
  • 2 cups cheddar cheese shredded
  • 1/2 cup Monterey Jack cheese shredded
  • sour cream, salsa, guacamole optional toppings

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat. Add diced chicken and cook for 5–7 minutes until browned and cooked through.
  • Stir in chili powder, cumin, garlic powder, onion powder, salt, and pepper. Cook for 1 additional minute to coat the chicken in spices.
  • Place cheddar and Monterey Jack cheese on half of each tortilla. Spoon chicken mixture over the cheese, add a little more cheese on top, and fold the tortilla in half.
  • In the same skillet over medium heat, cook filled tortillas for 2–3 minutes per side until golden and cheese is melted.
  • Remove from skillet, cut into wedges, and serve with sour cream, salsa, or guacamole if desired.

Notes

Use rotisserie chicken or pre-cooked chicken to cut down on cook time. Make it your own by adding peppers, beans, or swapping in different cheeses. Reheat leftovers in an air fryer to keep them crispy.
