Ingredients
  

For the casserole

  • 2–3 cups shredded cooked chicken (rotisserie or baked)
  • 1 can cream of chicken soup (10.5 oz)
  • 1/2 cup sour cream or mayonnaise
  • 1/4 cup chicken broth

For the stuffing

  • 1 box stuffing mix (6 oz, traditional or cornbread)
  • 2 tablespoons melted butter
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • In a large bowl, combine 2–3 cups of shredded chicken, one can of cream of chicken soup, half a cup of sour cream or mayonnaise, and a 1/4 cup of chicken broth. Stir until smooth and creamy.
  • Spread the chicken mixture evenly into the prepared dish.

Prepare the Stuffing

  • Prepare the stuffing mix according to the package directions, using slightly less water than suggested to avoid sogginess.
  • Once ready, spoon the stuffing over the chicken mixture and spread it evenly.
  • Drizzle melted butter across the stuffing.

Baking

  • Bake the casserole uncovered in the preheated oven for 35–40 minutes until the top is golden and the edges are bubbling.
  • Let it rest for 10 minutes before serving.

Notes

For a personalized touch, consider adding frozen peas or corn, sautéed mushrooms, bell peppers, or fresh herbs. For extra flavor, top with shredded cheese or mix barbecue sauce in the chicken mixture. Leftovers can be refrigerated for 3–4 days.
