  • 2-4 cups Dandelion Petals Gather from pesticide-free areas.
  • 4 cups Water Boiling water for steeping.
  • ¼ cup Lemon Juice Freshly squeezed.
  • 1 package Powdered Pectin High-methoxyl pectin preferred.
  • 3-4 cups Sugar Provides sweetness.
  • 1 cup Honey Natural sweetener alternative.
  • to taste Fresh Herbs (like mint or basil) For added flavor.

Preparation

  • Gather the dandelion petals, only using the yellow parts. Rinse them well under cool water to remove insects.
  • Boil 4 cups of water in a large pot. Once boiling, add the dandelion petals and stir gently.
  • Cover the pot and steep the petals for about 3 hours.
  • Strain the liquid through a fine sieve or cheesecloth, pressing to extract all the liquid, resulting in about 4 cups of dandelion tea.
  • Return the dandelion tea to the pot. Stir in the lemon juice and powdered pectin. Bring to a rolling boil over medium-high heat, stirring constantly.
  • Slowly add in the sugar and honey while stirring until fully dissolved. Boil for 1-2 minutes until it thickens.
  • Ladle the jelly into sterilized jars, leaving some space at the top and ensuring the rims are clean for proper sealing.
  • Seal the jars and let them cool at room temperature. Store in the refrigerator or process in a boiling water bath for longer shelf life.

Notes

For added brightness, a dash more lemon juice can be added. Experiment with fresh herbs like mint for a unique twist. Don’t rush the boiling step for better texture.
