Main Ingredients

  • 2 cups sliced cucumbers Use fresh cucumbers for best flavor.
  • 1 cup cherry tomatoes Halved for easy mixing.
  • 1 cup red onion Thinly sliced.
  • 1/2 cup feta cheese Crumbled.
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • to taste salt and pepper

Instructions
 

Preparation

  • In a large bowl, combine sliced cucumbers, cherry tomatoes, and red onion.
  • In a small bowl, whisk together olive oil and balsamic vinegar.
  • Pour the vinaigrette over the salad and toss to combine.
  • Add crumbled feta cheese on top and season with salt and pepper to taste.

Notes

Serve chilled. Great as a side dish or a light meal. Can be made ahead of time; just add the feta just before serving to keep it fresh.
