Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 2 cups Rice Krispies

Wet Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Mix-ins

  • 1 cup chocolate chips
  • 1 cup mini marshmallows optional

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and creamy.
  • Beat in the large egg and add the vanilla extract.
  • In a separate bowl, combine the flour and baking soda. Gradually add this mix to the butter mixture and stir until well combined.
  • Stir in the Rice Krispies, chocolate chips, and mini marshmallows if using.
  • Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper, keeping them spaced apart.

Baking

  • Bake for 10-12 minutes or until the edges are golden. Keep an eye on them during baking.
  • Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Notes

Store cookies in an airtight container in the fridge for up to one week; freeze for up to three months. Reheat in the oven or air fryer to restore crunch.
