  • 2-3 pounds boneless, skinless chicken breasts (or thighs)
  • 1 cup chicken broth or water Broth is recommended for extra flavor.
  • 1 packet taco seasoning Store-bought or homemade.
  • 1 teaspoon garlic powder Enhances flavor.
  • 0.5 teaspoon salt Adjust to taste.
  • 0.5 teaspoon pepper Adjust to taste.
  • 1 squeeze lime Optional but adds brightness.
  • 1 dash smoked paprika Optional for extra flavor.
  • 1 splash salsa Optional for variation.

Preparation

  • Place the chicken breasts in the bottom of the slow cooker.
  • Sprinkle the taco seasoning, garlic powder, salt, and pepper over the chicken.
  • Pour in the chicken broth to ensure the chicken remains juicy.
  • Cover the slow cooker and set it to low for 6-7 hours or high for 3-4 hours.
  • Once cooked, use two forks to shred the chicken directly in the slow cooker.
  • For additional sauce, ladle some cooking juices over the shredded chicken.

Notes

Store leftovers in airtight containers for up to 4 days in the fridge or freeze for up to 3 months. Experiment with spices to alter flavor profiles.
