Ingredients
  

  • 1 pork tenderloin (1.5 to 2 pounds), trimmed
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth

Instructions
 

  • In a small bowl, whisk together balsamic vinegar, olive oil, brown sugar, Dijon mustard, thyme, garlic powder, salt, and black pepper to make the sauce.
  • Place the trimmed pork tenderloin in the crockpot. Pour the balsamic sauce over the pork to coat it evenly. Add chicken broth around the pork.
  • Cook on low for 6-8 hours or on high for 3-4 hours, until pork reaches an internal temperature of 145°F (63°C). Let rest for 10-15 minutes before slicing.

Notes

Kid-approved and meal prep friendly! Store leftovers in the fridge for up to 4 days, or freeze for 2-3 months. Reheat in the oven at 325°F with a splash of broth to keep it moist. The air fryer also works great for smaller portions. Serve with mashed potatoes, rice, or a simple green salad for a complete meal.
