Ingredients
  

Chicken Preparation

  • 2 medium medium boneless, skinless chicken breasts (about 1 pound / 450g) Trim any excess fat and pound to ½ inch thick.
  • ½ cup all-purpose flour (65g)
  • ¼ cup finely grated Parmesan cheese (25g)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 2 large large eggs Beaten until smooth.
  • ½ cup olive oil or vegetable oil (120ml) for frying Heat until shimmering but not smoking.

Wrap Assembly

  • 2 cups chopped romaine lettuce
  • cup Caesar dressing (80ml) Spread on each tortilla.
  • 4 large flour tortillas (10-inch / 25cm) Warm slightly before assembly.

Instructions
 

Preparation

  • Trim any excess fat from the chicken breasts and pound gently between plastic wrap until about ½ inch thick.
  • In a shallow bowl, mix the flour, grated Parmesan, garlic powder, paprika, salt, and black pepper.
  • In a separate bowl, beat the eggs until smooth.
  • Dip each chicken breast into the beaten eggs, allowing excess to drip off, then dredge in the flour mixture, pressing lightly.
  • Place the coated chicken on a plate.

Cooking

  • Heat ½ cup of oil in a large skillet over medium-high heat until shimmering but not smoking.
  • Fry the chicken breasts for 4-5 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F / 74°C).
  • Drain the chicken on paper towels.

Assembly

  • Warm the tortillas slightly in a dry pan or microwave.
  • Spread about 1 tablespoon of Caesar dressing on each tortilla.
  • Layer with chopped romaine lettuce, sliced crispy chicken, and any optional add-ins.
  • Fold the sides in and roll tightly, slice in half if preferred, and serve.

Notes

For best taste, serve immediately. Store leftovers in an airtight container for up to 2 days. Keep dressing and lettuce separate until ready to eat for optimal crunch.
