Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese optional
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Cooking oil spray or a small amount of vegetable oil

Instructions

  • Preheat your oven to 400°F (200°C) or prepare a frying pan with enough oil to shallow fry.
  • Flatten the chicken breasts to an even thickness using a meat mallet.

Set up a breading station with three bowls:

  • Bowl 1: All-purpose flour seasoned with salt and pepper.
  • Bowl 2: Beaten eggs.
  • Bowl 3: Panko breadcrumbs mixed with Parmesan, garlic powder, and paprika.
  • Dredge each chicken piece in the flour, dip in the eggs, and coat with the breadcrumb mixture. Press gently to ensure the coating sticks.
  • For Baking: Arrange breaded chicken on a greased or parchment-lined baking sheet. Spray lightly with cooking oil. Bake for 20-25 minutes, flipping halfway through, until golden and the internal temperature reaches 165°F (74°C).
  • For Frying: Heat oil in a skillet over medium heat. Fry the chicken for 4-5 minutes per side, or until golden brown and fully cooked. Drain on paper towels.
  • Serve immediately with your favorite dipping sauce or sides.

Notes

  • For extra flavor, marinate the chicken in buttermilk or seasoned yogurt for 1 hour before breading.
  • To make it gluten-free, substitute flour and breadcrumbs with gluten-free alternatives.
