  • 1.5 lbs chicken breasts, cut into 1-inch pieces You can use chicken thighs for a juicier option.
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup olive oil For frying the chicken.

For the sauce

  • 6 cloves minced garlic
  • 0.5 cup chopped yellow onion Consider using pre-chopped to save time.
  • 1 can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 0.25 cup chicken broth Vegetable broth can be used for a vegetarian option.
  • 1 cup heavy cream You can substitute Greek yogurt for a lighter version.
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup chopped fresh basil

Instructions
 

Cook the Chicken

  • Season the chicken with salt and black pepper.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add the chicken to the skillet and cook for 6-8 minutes until browned and cooked through.
  • Remove the chicken from the skillet and set aside.

Prepare the Sauce

  • In the same skillet, add minced garlic and chopped onion. Cook for 3-5 minutes until softened.
  • Stir in diced tomatoes, dried oregano, and chicken broth.
  • Bring the mixture to a simmer, then reduce the heat to low.

Combine Everything

  • Add heavy cream and Parmesan cheese to the skillet, simmering for 5 minutes until the sauce thickens.
  • Return the chicken to the skillet and coat it with the creamy sauce.
  • Stir in chopped fresh basil. Serve immediately over pasta, rice, or mashed potatoes.

Notes

For sides, consider garlic bread, steamed broccoli, rice, or a fresh salad. Store leftovers in the fridge for up to 3 days or freeze for up to 2 months. Reheat using an air fryer or oven at 350°F until heated through.
