Ingredients
  

Main Ingredients

  • 2 cans canned crushed tomatoes San Marzano if you’re feeling fancy, but regular is fine.
  • 1 medium onion, chopped
  • 3 cloves garlic Add extra garlic as desired.
  • 1 medium carrot, diced Trust me on this.
  • 1 cup heavy cream
  • 2 tablespoons olive oil or butter
  • 1 teaspoon sugar Add if tomatoes are extra tangy.
  • to taste salt and pepper
  • 1 cup chicken or veggie broth
  • to taste fresh basil Optional.

Instructions
 

Preparation

  • Heat olive oil or butter in a large saucepan.
  • Add chopped onions and sauté until soft.
  • Add garlic and carrot, cooking for a few moments.
  • Add canned crushed tomatoes and broth, followed by a pinch of sugar.
  • Let the mixture bubble on low heat for about 20 minutes.

Blending

  • Use a stick blender to purée the soup until smooth or blend in batches.
  • Stir in heavy cream and fresh basil.
  • Season with salt and pepper to taste.
  • Serve steamy.

Notes

This soup can be made ahead and tastes better the next day. Store in an airtight container for up to four days, and reheat slowly. If it thickens overnight, add more broth as needed.
