Ingredients
  

Garlic Preparation

  • 3 heads heads of garlic Roasted for sweetness.
  • 1 tbsp olive oil For drizzling over garlic.

Garlic Butter Spread

  • 1 stick butter, softened At room temperature for easy mixing.
  • 1 tbsp chopped basil Adds freshness.
  • 1 tbsp Italian seasoning

Creamy Cheese Mixture

  • 4 oz cream cheese, softened Provides creaminess.
  • 2 tbsp sour cream For tanginess.
  • ½ tsp red pepper flakes For a little heat.
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste Salt and pepper To season the mixture.

Main Ingredients

  • 4 slices sourdough or Italian bread Choose your preferred bread.
  • 4 slices provolone cheese For melting.
  • 4 slices cheddar cheese
  • ½ cup shredded mozzarella cheese For added cheesiness.
  • ¼ cup shredded parmesan cheese
  • ¼ cup shredded cheddar cheese For the top layer.

Preparation

  • Preheat your oven to 400°F (200°C). Slice the tops off the heads of garlic.
  • Drizzle the garlic with olive oil and wrap it in foil. Roast for 35–40 minutes until golden and soft. Let it cool.
  • Mash the roasted garlic with softened butter, chopped basil, and Italian seasoning to make a garlic butter spread. Set aside.
  • In a bowl, mix cream cheese, sour cream, red pepper flakes, Italian seasoning, garlic powder, onion powder, salt, and pepper. This will be your creamy cheese mixture.

Assembly

  • Spread the garlic butter on one side of each slice of bread.
  • On the unspread side, layer provolone and cheddar cheeses, add a dollop of the cream cheese mixture, and sprinkle with mozzarella.
  • Close the sandwiches, sprinkle the extra parmesan and cheddar on the outside, and flip them so the cheese crust is facing out.

Cooking

  • Heat a skillet over medium heat and grill the sandwiches until golden brown and crispy on both sides, ensuring the cheese melts inside.
  • Once done, slice the sandwiches in half and serve hot.

Notes

For extra flavor, you can drizzle some hot honey inside the sandwiches. Serve with tomato soup or a spicy marinara for dipping. You can customize with different breads and cheeses as desired.
