Preparation

  • Preheat the oven to 375°F (190°C).
  • In a bowl, mix cranberries, orange juice, orange zest, and honey until combined.
  • Season the chicken breasts with salt and pepper and place them in a baking dish.
  • Pour the cranberry-orange mixture over the chicken, drizzle with olive oil, cover with foil, and bake for 25 minutes.
  • Remove the foil and bake for an additional 15 minutes until the chicken is cooked through.
  • Garnish with fresh thyme or parsley if desired and serve warm.

Notes

To prevent soggy leftovers, do not add garnishes until ready to serve. For meal prep, this dish stores well in the fridge and can be reheated easily. Consider buying pre-chopped veggies to save time.
