Preparation

  • Preheat your oven to 375°F (190°C).
  • Wash and chop your vegetables into bite-sized pieces.
  • In a large bowl, toss your chopped veggies with olive oil, salt, and pepper.
  • Add in the cheese and mix well, sprinkling a little extra cheese on top.
  • In a separate bowl, combine the breadcrumbs with herbs if using.
  • Spread the veggie mixture into a baking dish.
  • Top with breadcrumbs, spreading evenly over the veggies.

Baking

  • Bake in the oven for about 25-30 minutes, until the top is golden and bubbly.
  • Let it cool for a few minutes before serving.

Notes

Presentation matters! Serve in the baking dish or on a colorful platter, garnished with fresh herbs. Pairs well with roasted chicken or meatloaf. Leftovers can be stored in an airtight container in the fridge for up to three days. Reheat in the oven for a crispy topping.
