Cottage Cheese Scrambled Eggs

Ingredients
  

  • 4 large eggs
  • ½ cup cottage cheese preferably low-moisture
  • 1 tablespoon butter for the pan
  • ¼ teaspoon salt or to taste
  • teaspoon black pepper optional
  • chopped chives or parsley optional, for garnish

Instructions
 

  • Crack the eggs into a bowl and whisk until fully combined.
  • Add the cottage cheese to the eggs and mix gently to combine.
  • Melt the butter in a nonstick pan over low heat.
  • Pour in the egg and cottage cheese mixture and cook slowly, stirring gently and frequently.
  • Continue cooking until eggs are soft, fluffy, and just set. Season with salt and pepper to taste.
  • Serve hot with a sprinkle of chopped herbs if desired.

Notes

Kid-approved and meal prep friendly. To avoid watery eggs, use low heat and drain cottage cheese before adding. Great with veggies, herbs, or a slice of toast. Store leftovers in an airtight container and reheat gently.
