Main Ingredients

  • 8 slices Rye bread Can substitute with sourdough or whole grain.
  • 1 pound Corned beef
  • 8 ounces Swiss cheese Any melting cheese can be used.
  • 1 cup Sauerkraut Coleslaw can be used as a substitute.
  • 1/2 cup Thousand Island dressing Adjust amount to taste.
  • 4 tablespoons Butter For grilling.

Instructions
 

Preparation

  • Heat a skillet over medium heat until hot.
  • Butter one side of each slice of rye bread.
  • Spread Thousand Island dressing on the unbuttered side of two slices.
  • Layer corned beef, sauerkraut, and Swiss cheese on top of the dressing.
  • Top with the remaining slices of bread, buttered side up.
  • Grill the sandwiches in the skillet until golden brown on both sides and the cheese is melted, about 4-5 minutes per side.
  • Slice in half and serve warm.

Notes

To store leftovers, keep in an airtight container in the fridge. Reheat in the oven or skillet for best results to avoid sogginess.
