  • 2 pieces carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth Can use low-sodium for a healthier option
  • 1 cup heavy cream or coconut cream Use coconut cream for a lighter option
  • 1 teaspoon dried thyme
  • to taste Salt and pepper
  • 2 cups assorted fresh vegetables (e.g., zucchini, spinach, peas) Use any vegetables you have on hand
  • to garnish Fresh herbs (e.g., parsley, basil)
  • as needed Bread for serving Pair with crusty bread for dipping

Instructions
 

Preparation

  • In a large pot, heat olive oil over medium heat until it shimmers.
  • Add chopped onion, carrots, and celery. Sauté until the vegetables are soft, about five minutes.
  • Stir in the minced garlic and let it cook for another minute.
  • Add vegetable broth, dried thyme, salt, and pepper. Bring to a boil.
  • Reduce heat, stir in heavy cream and assorted fresh vegetables. Cook until tender, about 10 minutes.
  • Taste and adjust seasoning if necessary.
  • Serve hot, garnished with fresh herbs and a side of bread.

Notes

To store leftovers, cool completely before transferring to an airtight container. It can be refrigerated for 3-4 days, or frozen for up to 3 months. Reheat gently, adding a splash of broth or cream as needed.
