  • 1 cup almond flour Can be substituted with oat flour.
  • 1 cup all-purpose flour Can be substituted with gluten-free flour.
  • 1 tsp baking soda
  • 1/2 tsp salt

Wet Ingredients

  • 1/2 cup coconut oil (melted)
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract

Add-ins

  • 1/2 cup vegan chocolate chips Use ready-made to save time.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix together the almond flour, all-purpose flour, baking soda, and salt.
  • In another bowl, combine the melted coconut oil, brown sugar, maple syrup, and vanilla extract. Whisk until smooth.
  • Gradually stir the dry mixture into the wet mixture until everything is well combined.
  • Fold in the vegan chocolate chips.
  • Scoop portions of the dough onto a baking sheet lined with parchment paper.

Baking

  • Bake for 10-12 minutes until lightly golden around the edges.
  • Let cookies cool on the baking sheet for a few minutes, then transfer to a wire rack.

Notes

For extra crispy cookies, reheat in the oven or use an air fryer. Store in an airtight container for up to a week.
