Ingredients
  

For the crust

  • 1/2 cup sugar For the crust.

For the rhubarb filling

  • 5 stalks rhubarb (sliced into 1/2-inch thick pieces) Look for firm, vibrant stalks.
  • 1/2 cup sugar Sweetens the filling.
  • 1 medium lemon (freshly zested and juiced) Adds brightness.
  • 1 teaspoon vanilla extract Enhances flavor.
  • 2 1/2 teaspoons cornstarch Thickens the filling.

For the topping

  • 1 cup old-fashioned oats Adds texture.
  • 1/2 cup sugar Sweetens the topping.
  • 1 teaspoon vanilla sugar Optional for extra sweetness.
  • 1/2 teaspoon ground cinnamon Adds warmth.
  • 1/2 cup butter (melted and cooled slightly) For binding ingredients.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine 1/2 cup sugar, flour, baking powder, salt, and cold butter. Blend until the mixture resembles coarse crumbs.
  • Stir in the egg until the dough is combined.
  • In another bowl, mix sliced rhubarb, 1/2 cup sugar, lemon zest, lemon juice, vanilla extract, and cornstarch. Toss until rhubarb is coated.

Assembly

  • Spread half of the crust mixture into a greased 9x13-inch baking pan.
  • Pour the rhubarb filling evenly on top, then sprinkle the remaining crust mixture over it.
  • In a small bowl, combine the oats, 1/2 cup sugar, vanilla sugar, ground cinnamon, and melted butter. Mix and sprinkle over the top.

Baking

  • Bake for about 45 minutes, until the top is golden brown and filling is bubbly.
  • Allow to cool completely before slicing.

Notes

Serve warm with vanilla ice cream or whipped cream. Fresh mint or a drizzle of caramel adds a special touch. Store in an airtight container for up to three days.
