Ingredients
  

Wet Ingredients

  • 1 cup canned pumpkin
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 large egg

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin pie spice

Add-ins

  • 1 cup chocolate chips

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix together the canned pumpkin, sugar, brown sugar, melted butter, vanilla extract, and egg until smooth.
  • In another bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Gently fold in the chocolate chips.

Baking

  • Drop spoonfuls of dough onto a lined baking sheet, leaving space in between each piece.
  • Bake for 12-15 minutes, or until the edges are lightly golden.
  • Let the cookies cool before serving.

Notes

Store cookies in an airtight container. They will stay fresh in the fridge for about a week, or freeze for up to three months. For reheating, bake in the oven at 350°F (175°C) for a few minutes.
