Ingredients

  • 2 pounds potatoes Preferably yellow or red potatoes for creaminess.
  • 3 pieces hard-boiled eggs, chopped
  • 1 cup celery, diced

For the Dressing

  • 1/2 cup mayonnaise Can substitute with Greek yogurt or vegan alternative.
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar Add more for a tangy twist.

Cooking the Potatoes

  • Boil the potatoes in salted water until fork-tender. Drain and let cool.

Mixing Ingredients

  • In a large bowl, combine the cooled potatoes, chopped eggs, and celery.
  • In a smaller bowl, whisk together mayonnaise, mustard, vinegar, salt, and pepper.
  • Pour the dressing over the potato mixture.
  • Toss gently to combine.

Chilling the Salad

  • Chill in the refrigerator for at least 1 hour before serving. Garnish with parsley if desired.

Notes

For a creamier texture, use waxy potatoes. Adding crispy bacon or chopped chives can provide a delightful twist. Storing leftovers is easy; just keep them in an airtight container and refrigerate for 3-4 days.
