Classic Philly Cheesesteak Meatloaf

A delicious twist on traditional meatloaf that combines the savory flavors of a Philly cheesesteak with the comforting familiarity of meatloaf.

Ingredients
  

For the vegetable sauté

  • 2 tablespoons butter Used for sautéing
  • 1 small yellow onion (diced) Provides flavor
  • 1 small green bell pepper (diced) Adds sweetness and crunch
  • 8 ounces brown mushrooms (minced) Enhances umami flavor
  • 1/2 teaspoon Kosher salt For seasoning
  • 1/2 teaspoon fresh ground black pepper For seasoning

For the meatloaf

  • 2 pounds lean ground beef (80/20 or 85/15) Main protein
  • 2 tablespoons ketchup Adds moisture and sweetness
  • 2 tablespoons Worcestershire sauce Enhances flavor
  • 2 large eggs For binding
  • 1 cup panko breadcrumbs For texture
  • 8 ounces Provolone Cheese Slices For flavor and melting

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and spray a large loaf pan with cooking spray.
  • In a large skillet, melt the butter over medium heat, then add the diced onions, green bell peppers, and minced mushrooms. Sprinkle with Kosher salt and black pepper.
  • Let the vegetables brown for 1–2 minutes without stirring, then stir and let them brown for another 1–2 minutes. Allow the mixture to cool for five minutes.

Mixing

  • In a large bowl, combine the lean ground beef, ketchup, Worcestershire sauce, eggs, panko breadcrumbs, and the cooled vegetable mixture.
  • Mix it together until well combined using your hands or a spoon.

Forming and Baking

  • Spread half of the meat mixture into the prepared loaf pan.
  • Place half of the Provolone cheese slices in the center, forming a 2-inch wide section.
  • Cover the cheese with the remaining meat mixture, shaping it into a rounded loaf.
  • Bake for 40 minutes, then add the remaining cheese slices on top and bake for an additional 15–20 minutes.
  • Allow the meatloaf to rest for 10 minutes before slicing.

Notes

Serve with mashed potatoes or a salad. This meatloaf can be enjoyed in a toasted hoagie bun for a cheesesteak experience. Leftovers can be stored in the fridge for up to four days.
