  • 0.5 cups granulated sugar
  • 0.5 cups packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, whisk together the gluten free flour, baking soda, and salt until well combined.
  • In another bowl, cream together the softened butter, granulated sugar, brown sugar, and vanilla extract until smooth.
  • Beat in the egg until the mixture is well combined.
  • Gradually add the dry ingredients into the wet mixture, mixing until just combined.
  • Fold in the chocolate chips gently.

Baking

  • Drop tablespoon-sized balls of dough onto a lined baking sheet, spacing them a couple of inches apart.
  • Bake for 10-12 minutes until edges are golden but the center remains soft.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

To keep the cookies fresh, store in an airtight container for up to a week in the fridge or freeze them for up to three months. Reheat in the oven or air fryer for the best texture.
