use gluten-free if needed

Optional toppings: sliced scallions
sesame oil, or tofu
Instructions
Heat the broth in a medium saucepan over medium heat until it simmers.
If using, dissolve cornstarch in a small amount of cold water and add to the broth, stirring well.
Slowly pour the beaten eggs into the broth in a thin stream while stirring gently to create ribbons.
Add soy sauce and white pepper, adjusting seasonings to taste.
Serve hot, garnished with scallions, sesame oil, or other toppings.
Notes
Use bone broth for added collagen benefits.
Tofu or additional vegetables can be added for extra nutrition.
Adjust the thickness by varying the amount of cornstarch or omitting it altogether.
