Ingredients
  

  • 2 large eggs beaten
  • 4 cups chicken vegetable, or bone broth (low-sodium if preferred)
  • 1 tsp cornstarch optional for thickening
  • 1 tsp soy sauce use gluten-free if needed
  • 1/4 tsp white pepper
  • Optional toppings: sliced scallions sesame oil, or tofu

Instructions
 

  • Heat the broth in a medium saucepan over medium heat until it simmers.
  • If using, dissolve cornstarch in a small amount of cold water and add to the broth, stirring well.
  • Slowly pour the beaten eggs into the broth in a thin stream while stirring gently to create ribbons.
  • Add soy sauce and white pepper, adjusting seasonings to taste.
  • Serve hot, garnished with scallions, sesame oil, or other toppings.

Notes

  • Use bone broth for added collagen benefits.
  • Tofu or additional vegetables can be added for extra nutrition.
  • Adjust the thickness by varying the amount of cornstarch or omitting it altogether.
