  • 2 cups mixed vegetables (such as bell peppers, corn, and red onion) Feel free to substitute based on preferences.
  • 1 cup fresh cilantro, chopped Can substitute with parsley if desired.
  • 1 1 avocado, diced Add just before serving to prevent browning.

Dressing and Seasoning

  • 1 cup chunky salsa Choose your favorite type.
  • 1 whole lime Juice of 1 lime.
  • to taste salt Adjust to your preference.

Serving

  • as needed servings tortilla chips For serving alongside the salad.

Preparation

  • In a large bowl, combine the shrimp, mixed vegetables, cilantro, and diced avocado.

  • Season with salt to taste.
  • Serve immediately with tortilla chips on the side.

Notes
