Ingredients
  

For the Marinade

  • 1/4 cup lime juice
  • 2 tablespoons honey
  • 1/4 cup fresh cilantro, chopped
  • Salt to taste salt
  • Pepper to taste pepper

Main Ingredients

  • 2 pieces chicken breasts Can use frozen, thawed before marinating
  • 1 cup rice Jasmine or basmati recommended
  • 1/2 cup peach salsa Can substitute with mango salsa or diced tomatoes
  • 1 tablespoon olive oil For cooking the chicken

Instructions
 

Preparation

  • In a bowl, mix lime juice, honey, chopped cilantro, salt, and pepper to make a marinade.
  • Marinate the chicken breasts in the mixture for at least 30 minutes.
  • Cook rice according to package instructions.

Cooking

  • Heat olive oil in a skillet over medium heat.
  • Cook the marinated chicken for about 6-7 minutes on each side until fully cooked.
  • Let chicken rest before slicing.

Serving

  • Serve the chicken over a bed of rice and top with fresh peach salsa.

Notes

Best served warm. Store leftovers in an airtight container for up to 3 days. Reheat with a splash of lime juice.
