Cupcake Ingredients

  • 1.5 cups all-purpose flour
  • 1.5 cups cake flour Substitute with a mix of all-purpose flour and cornstarch if necessary.
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1 tablespoon ground cinnamon Use fresh ground for best flavor.
  • 1 cup unsalted butter, room temperature Use real butter for best flavor.
  • 1.75 cups sugar
  • 4 large eggs, room temperature Room temperature eggs mix better.
  • 2 teaspoons vanilla extract
  • 1.25 cups milk

Topping Ingredients

  • 4 tablespoons butter, melted
  • 0.25 cups granulated sugar
  • 1 teaspoon ground cinnamon

Frosting Ingredients

  • 0.5 cup butter, softened
  • 1 8 ounce cream cheese, softened
  • 0.5 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 5 cups confectioners' sugar
  • 1 tablespoon milk (if desired) Add to achieve desired consistency.

Instructions
 

Preparation

  • Preheat oven to 350 degrees F (175 degrees C).
  • Line standard muffin tins with paper liners.
  • In a mixing bowl, whisk together all-purpose flour, cake flour, baking powder, salt, and cinnamon.
  • Cream butter and sugar in an electric mixer until light and fluffy.
  • Add eggs one at a time, beating well after each addition. Scrape down the bowl as needed.
  • Beat in vanilla extract until fully incorporated.
  • Reduce mixer speed to low. Gradually add flour mixture in three batches, alternating with two additions of milk.
  • Fill each cupcake liner about three-quarters full with batter.

Baking

  • Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
  • Transfer the tin to a wire rack to cool for about 10 minutes before removing cupcakes to cool completely.

Topping Preparation

  • Melt remaining butter in a small bowl.
  • In another small bowl, combine granulated sugar and cinnamon.
  • Once cupcakes are cooled, brush with melted butter and dip in cinnamon sugar mixture.

Frosting

  • Beat softened butter and cream cheese until light and fluffy.
  • Mix in vanilla extract and cinnamon until well combined.
  • Gradually add confectioners' sugar one cup at a time, mixing until fully incorporated. Adjust consistency with milk if needed.

Notes

Store in an airtight container at room temperature for up to three days or refrigerate. For longer storage, freeze completely cooled cupcakes wrapped tightly.
